Dr. Fajardo-Lira is a Professor of Nutrition and Food Science. She teaches courses on nutrition, food chemistry and analysis, product development, quality assurance, food safety, and sustainability. Her research interests are in food chemistry, education in food science and sustainability issues in nutrition and food science.
